Chicken Breasts with Apples and Cider

Ingredients

  • 6 skinless chicken breast fillets

  • 1-1/3 tbsp vegetable oil

  • 1-1/3 tbsp Dijon mustard, or stoneground mustard

  • 1 cup apple cider, or apple juice

  • 3 large apples, cored and cut into 1/2 in. slices

  • 3/4 cup cream

Directions

  1. Heat oil in frying pan over medium heat. Add chicken and cook for 5 minutes, until cooked through. Remove from pan and keep warm. Add apple slices and cook for 2-3 minutes. Add cider, mustard, and cream; bring to a boil and reduce by 1/3. Spoon apples and sauce over chicken.
