Mediterranean Couscous

  • 1 cup couscous

  • 1 tbsp fresh mint, chopped

  • 1-1/2 cups chicken stockor water

  • 2 scallions, trimmed and finely chopped

  • 1/4 cup feta cheese, crumbled


  1. Bring stock to a boil in a saucepan. Stir in couscous and salt to taste. Cover and remove from heat. Let sit 10 minutes. Stir in scallions, mint, and cheese using a fork, fluffing couscous.
